Ingredients
- 500 g dried penne or other short pasta
- 2 tbsp olive oil
- 1 brown onion, finely diced
- 2 tsp minced garlic
- 2 tbsp tomato paste
- 2 × 400 g cans crushed tomatoes
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Grated parmesan, to serve (use a vegetarian hard cheese if needed)
Method
- Bring a large pot of salted water to the boil. Cook the pasta according to the packet directions. Before draining, reserve a mug of pasta water.
- While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the onion and cook for about 5 minutes, stirring, until softened.
- Add the minced garlic and tomato paste. Stir for 1 minute.
- Add the crushed tomatoes and oregano. Simmer gently for 10–15 minutes, stirring occasionally. Season with salt and pepper.
- Add the drained pasta to the sauce and toss together. Add a splash of the reserved pasta water if the sauce needs loosening.
- Divide between bowls and serve with grated parmesan.
Notes
- For a smoother sauce, blend it before adding the pasta.
- Add a handful of baby spinach to the hot sauce if you like.
